Telly Today: From Gino D’Acampo in Italy to Bill Bailey in Australia

GINO’S ITALY

In his latest series, Gino D’Acampo goes on an odyssey, both on land and in the depths of the sea, to discover his homeland’s true hidden gems as he explores the well-kept food secrets of Italy’s deep South in Puglia and Basilicata.

In this, the fourth episode of the series, Gino travels through Puglia’s meat country: taking in the town of Cisternino and the Itria valley.

Ploughing through the heat on a push bike, he revels in his favourite kind of houses: trulli, stone conical-shaped ancient homes, which are scattered across the landscape.

Gino is shown the secret of how to make capocollo, a tasty cured meat unique to the area, before heading down to a local farm to lend a hand with the free-range pigs. Stopping off at an olive producer, Gino uncovers some unusual products made from olive trees, including a beer.

In the shadows of the trulli, Gino decides it’s time for a BBQ , creating the local favourite, bombette (this region’s tasty answer to British pigs in blankets).

The series sees Gino explore a romantic realm: full of rugged mountains, ancient cave cities, beaches, and clear turquoise waters. The southern heel and sole of the country is Italy at its most epic. These regions are a melting pot of secrets; with much of their culinary fare influenced by former occupiers, ranging from the Ancient Greeks to the Byzantines and Spanish, who all left their mark on the modern-day dishes and traditions found in Italy’s deep south.
